Is there a way to have the images reside on a Thunderbolt disk (we have that now) and not having that drive wiped? I've seen the "exclude local drives", but does that mean all others get auto wiped if that's set?

Lightning is setup to always ignore the drive your are booted from.

What I would do is:
  1. put a base OS on the external drive, and boot from it (I usually name the external drive something like "MacHD Thunder" or something distinguishable.
  2. Choose an image and click deploy
  3. Uncheck the "exclude internal drive" option
  4. Let Lightning scan and it should show you the inter drive that you are NOT booted from (typically "Macintosh HD")
